Pulled Chicken Salad

  • 1 small roast chicken
  • ½ red cabbage, sliced
  • 3 grated carrots
  • 5 sliced spring onions
  • 2 sliced chillies
  • Small bunch of chopped coriander
  • 2 tbsp roasted peanuts, roughly chopped
  • 3.5 tbsp hoisin
  • 1.5 tbsp sesame oil
  • Combine the hoisin sauce and sesame oil in a small bowl, and set aside.
  • Remove all the meat from the chicken, and shred into large chunks. Place in a salad bowl with the cabbage, carrots, chillies, spring onions and half the chopped coriander. Toss together with the hoisin dressing and pile onto plates, topping with a scattering of peanuts and more coriander.
