Purple Broccoli, Stilton, and Mushroom Side
- 500g purple sprouting broccoli
- 1 tbsp olive oil
- Knob of salted butter
- 500g brown mushrooms, quartered
- 50g stilton, crumbled
- Drizzle of olive oil
- Cook the broccoli in a pan of boiling water for 3 mins, then remove and refresh in cold water. Drain well. Combine the oil and butter in a frying pan, and once sizzling, fry the mushrooms for 5 mins, or until golden.
- Add the broccoli to the pan with the mushrooms, and toss together. Cover, and cook for 3 mins, shaking occasionally. Season well, then tip into a serving bowl and scatter with the cheese and a drizzle of olive oil.
