Purple Sprouting Broccoli with Mushrooms and Stilton
- 500g purple sprouting broccoli, trimmed
- 1 tbsp olive oil
- Knob of salted butter
- 500g brown mushrooms, quartered
- 50g stilton, crumbled
- Boil the broccoli for 3 mins in salted water, then remove and refresh under cold water. Combine the butter and oil in a pan, and sizzle the mushrooms for 5 mins. Add the broccoli to the pan, and cook covered for 3 mins. Season well, tip into a serving bowl, and scatter with stilton and another drizzle of oil. The perfect side dish for a Sunday roast!
