Quick Cantonese Duck Stir Fry
- 1 duck breast
- 1 fennel bulb
- 4 spring onions
- 1⁄2 small tin of pineapple chunks, plus a splash of juice
- 1 tbsp oil
- 2 tbsp soy sauce
- Chopped chives and coriander, to garnish
- Slice the duck breast into 1 cm strips. Cut the fennel into slices, and then into strips, and thinly slice the spring onions. Heat up the oil in a wok, and chuck in the fennel. Stir fry for 2 minutes, then add the duck and the spring onions and stir fry for another 2 minutes.
- Add the soy sauce to the mix, along with the fruit and the splash of fruit juice. Stir fry for a couple more minutes to cook the meat, and then simmer for a while to reduce the sauce. Garnish with herbs, and serve with rice or noodles. Easy!
