Quick Cantonese Duck Stir Fry

  • 1 duck breast
  • 1 fennel bulb
  • 4 spring onions
  • 1⁄2 small tin of pineapple chunks, plus a splash of juice
  • 1 tbsp oil
  • 2 tbsp soy sauce
  • Chopped chives and coriander, to garnish
  • Slice the duck breast into 1 cm strips. Cut the fennel into slices, and then into strips, and thinly slice the spring onions. Heat up the oil in a wok, and chuck in the fennel. Stir fry for 2 minutes, then add the duck and the spring onions and stir fry for another 2 minutes.
  • Add the soy sauce to the mix, along with the fruit and the splash of fruit juice. Stir fry for a couple more minutes to cook the meat, and then simmer for a while to reduce the sauce. Garnish with herbs, and serve with rice or noodles. Easy!
