Quick Chicken Gumbo

  • 2 tbsp olive oil
  • 200g smoked bacon lardons or chopped pancetta
  • 1 sliced onion
  • 130g padron capsicums or green capsicums, sliced
  • 4 chicken breasts, cut into bite-sized pieces
  • 3 tbsp flour
  • 1 tbsp Cajun spice mix
  • 3 crushed garlic cloves
  • 500ml chicken stock
  • 2 sliced zucchini
  • 500g passata
  • 2 sliced spring onions
  • Cooked rice, to serve
  • Heat the oil in a large pan and fry the onion and bacon together for about 5 mins. Add the capsicums, chicken and flour, and fry for another 5 mins until the meat is golden. Stir in the spice mix and garlic, and slowly add the chicken stock, stirring constantly.
  • Add the zucchini, passata and seasoning, and simmer for 20 mins stirring frequently. Sprinkle over the spring onions and serve with rice.
