Quick Chicken Gumbo
- 2 tbsp olive oil
- 200g smoked bacon lardons or chopped pancetta
- 1 sliced onion
- 130g padron capsicums or green capsicums, sliced
- 4 chicken breasts, cut into bite-sized pieces
- 3 tbsp flour
- 1 tbsp Cajun spice mix
- 3 crushed garlic cloves
- 500ml chicken stock
- 2 sliced zucchini
- 500g passata
- 2 sliced spring onions
- Cooked rice, to serve
- Heat the oil in a large pan and fry the onion and bacon together for about 5 mins. Add the capsicums, chicken and flour, and fry for another 5 mins until the meat is golden. Stir in the spice mix and garlic, and slowly add the chicken stock, stirring constantly.
- Add the zucchini, passata and seasoning, and simmer for 20 mins stirring frequently. Sprinkle over the spring onions and serve with rice.
