Quick Surimi Salad
- 1 diced cucumber
- 200g rice noodles
- 200g surimi crab sticks, chopped
- Handful of sliced radish
- 20g quality mayo
- 150ml Greek yoghurt
- Pinch of garlic granules
- Handful of chopped dill
- Pinch of chilli flakes
- Simply break up the rice noodles and place in a bowl, then cover with boiling water and set aside for 15 mins to soften. Drain and leave to cool.
- Combine all the remaining ingredients in a salad bowl, and fold in the cooked noodles. Serve immediately as a side dish or as part of an antipasti spread.
