Quick Surimi Salad

  • 1 diced cucumber
  • 200g rice noodles
  • 200g surimi crab sticks, chopped
  • Handful of sliced radish
  • 20g quality mayo
  • 150ml Greek yoghurt
  • Pinch of garlic granules
  • Handful of chopped dill
  • Pinch of chilli flakes
  • Simply break up the rice noodles and place in a bowl, then cover with boiling water and set aside for 15 mins to soften. Drain and leave to cool.
  • Combine all the remaining ingredients in a salad bowl, and fold in the cooked noodles. Serve immediately as a side dish or as part of an antipasti spread.
