Ratatouille and Sausage Traybake

  • 1 onion, cut into 16 wedges
  • 3 zucchinis, chopped
  • 1 red capsicum, chopped
  • 3 tbsp olive oil
  • 8 large pork sausages
  • 2 crushed garlic cloves
  • 400g tin of chopped tomatoes
  • Preheat the oven to 220C. Place the zucchini, capsicum, and onion in a baking dish, drizzle with 2 tbsp of olive oil, and season well. Cook for 20 mins. Meanwhile, heat the remaining oil in a pan and fry the sausages for 5 mins to brown all over.
  • Stir the chopped tomatoes and garlic into the veggies, season again, and nestle the sausages into the baking dish. Cook for another 20 mins in the oven, then serve.
