Red Capsicum and Date Tagine
- 2 diced onions
- 2 sliced celery stalks
- 3 sliced garlic cloves
- 600ml veg stock
- 2 tsp turmeric
- 2 x 400g tins of chopped tomatoes, strained over a bowl to reserve the juice
- 1 lemon, juice only
- 2 tbsp harissa paste
- 2 tbsp clear honey
- 1 tbsp ground coriander
- 1 tsp cinnamon
- 6 red capsicums, cut into chunks
- 150g pitted dates, cut into thirds
- Preheat a slow cooker to high. Chunk in the onions, celery, stock, turmeric, and some seasoning, and cook for 1 hour. Add the strained tomatoes, lemon juice, honey, harissa, coriander and cinnamon, then mix in the capsicums and dates, and cook for 2 more hours. Serve with couscous or flatbreads and enjoy.
