Red Capsicum and Date Tagine

  • 2 diced onions
  • 2 sliced celery stalks
  • 3 sliced garlic cloves
  • 600ml veg stock
  • 2 tsp turmeric
  • 2 x 400g tins of chopped tomatoes, strained over a bowl to reserve the juice
  • 1 lemon, juice only
  • 2 tbsp harissa paste
  • 2 tbsp clear honey
  • 1 tbsp ground coriander
  • 1 tsp cinnamon
  • 6 red capsicums, cut into chunks
  • 150g pitted dates, cut into thirds
  • Preheat a slow cooker to high. Chunk in the onions, celery, stock, turmeric, and some seasoning, and cook for 1 hour. Add the strained tomatoes, lemon juice, honey, harissa, coriander and cinnamon, then mix in the capsicums and dates, and cook for 2 more hours. Serve with couscous or flatbreads and enjoy.
