Red Pepper and Steak Stir Fry
- 2 tsp soy sauce
- 2 tsp chilli sauce
- 2 tsp rice vinegar
- 2 tsp cornflour
- 2 tbsp veg oil
- 250g beef steak, sliced into 3cm strips
- 5cm piece of ginger, sliced into matchsticks
- 2 sliced garlic cloves
- 6 sliced spring onions
- 2 chopped red peppers
- 300g beansprouts
- Whisk together the chilli sauce, soy sauce, vinegar, cornflour and about 50ml water until smooth, then set aside. Heat 1 tbsp of oil in a wok and sear the steak strips for 2 mins, then add the garlic and ginger and stir-fry for 2 mins more. Add the sauce, mix to coat, then empty everything into a bowl and set aside.
- Wipe clean the wok, then fry the spring onion whites and peppers in the remaining oil for 3 mins. Return the beef mixture to the pan, stir in the beansprouts and stir-fry for 3 mins more. Scatter with the green part of the spring onions and some cooked brown rice - delicious!
