Red Pepper Linguine

  • 1 roasted red pepper
  • 30ml olive oil
  • 50g toasted walnut pieces
  • 1 garlic clove
  • 100g linguine
  • Parmesan, grated to serve
  • Add the pepper, olive oil, walnuts and garlic to a food processor with some seasoning, and blitz to a paste. Set aside. Meanwhile, cook the pasta in salted boiling water until al dente, then drain and reserve a ladleful of cooking water. Tip the pasta back into the pan with the red pepper sauce and some cooking water to loosen, stir to coat, then serve with plenty of black pepper and parmesan. Simple, but oh-so good!
