Red Wine Chorizo Tapas

  • 2 tbsp olive oil
  • 1 shallot, sliced
  • 1 garlic clove, chopped
  • 300g chorizo, cut diagonally into 2.5cm chunks
  • 2 bay leaves
  • 200ml red wine
  • Heat up a frying pan, and drizzle in the olive oil. Soften the garlic and onion for a couple of minutes, then chuck in the chorizo to fry for 2 minutes, or until the oil is released. Add the bay leaves and wine, and cook until the wine has reduced and covers the chorizo in a thick glaze. Serve with bread and olives.
