Roast Fish with Chorizo Crust and Asparagus
- 75g chorizo
- 2 slices of stale white bread
- 1 crushed garlic clove
- Olive oil
- 2 chunky fillets of firm white fish
- 250g trimmed asparagus
- 1 red capsicum, cut into chunks
- 1 tbsp white wine vinegar
- Pop the bread, garlic, chorizo, a splash of oil and some seasoning in a food processor and whizz to a paste. Season the fish fillets and place onto a baking tray, then smear the chorizo paste over the top. Scatter the capsicum and asparagus around the fish, drizzle with oil and seasoning and grill for 15 mins until the vegetables and fish are cooked through. Drizzle with white wine vinegar, and serve with a green leafy salad.
