Roast Garlic and Parmesan Sprouts

  • 400g brussels sprouts, halved
  • 2 tbsp olive oil
  • 50g butter
  • 3 crushed garlic cloves
  • ½ nutmeg, grated
  • 40g grated parmesan
  • 10g chopped parsley
  • 1 tbsp lemon juice
  • Salt and pepper
  • Preheat the oven to 220C. Season the sprouts with plenty of salt and pepper, and toss through the olive oil. Line a baking tray with paper, spread the sprouts on top - cut-side down - then roast for 15 mins.
  • Tip the sprouts into a bowl and mix with the butter, garlic, parmesan and nutmeg. Place back on the tray and roast for 10 mins more until golden and crisp on top. Sprinkle with lemon juice, stir well, and serve as a side for a roast dinner.
