Roast Gnocchi, Olive, and Sundried Tomato Towers
- 500g fresh gnocchi
- 4 tbsp quality olive oil
- 40 green olives, pitted
- 40 sundried tomatoes from a jar, drained
- 40 medium basil leaves
- Preheat the oven to 220C. Tip the gnocchi into a roasting tray and drizzle with the oil. Roast for about 25 mins or until beautifully golden, stirring every now and then. Thread the roasted gnocchi onto sticks with a green olive, a sundried tomato, and a basil leaf. Serve warm as an elegant and flavourful canape or side.
