Roast Lamb Ribs
- 2 sheets of lamb ribs, cut into chops
- 2 tbsp olive oil
- 2 tsp chopped thyme
- Salt and pepper
- For the Seasoning
- 1 tbsp smoked paprika
- 2 tbsp garlic powder
- 1 tbsp each of cumin seeds and dried oregano
- 2 tsp chilli flakes
- 1 tbsp salt
- ½ tbsp cracked pepper
- 1 tbsp brown sugar
- Preheat the oven to 170C. Place the ribs in a roasting tray and drizzle with oil, then sprinkle with salt, pepper and thyme. Roast for 2 hours. Meanwhile, dry fry the spices for the seasoning in a pan until aromatic, and tip all of the ingredients for the seasoning into a spice grinder and grind to a fine powder.
- Remove the ribs from the oven and sprinkle with the seasoning mixture. Finish with a sprinkling of chives and mint, and serve hot with all your favourite sides.
