Roast Pork Chop with Balsamic Red Onion
- 1 thick pork chop or loin steak
- 1 tbsp olive oil
- 1.5 tsp finely chopped rosemary
- 1 chopped garlic clove
- Salt and pepper
- For the Balsamic Onion
- 2 tbsp olive oil
- 1 medium red onion, sliced
- 2 tsp balsamic vinegar
- 1 tbsp brown sugar
- Preheat the oven to 200C. Put the chop in a bowl and add the oil, 1 tsp of chopped rosemary, and the garlic. Season well, and leave to marinate for 10 mins. Fry the chop for 2 mins on each side, then roast on a baking tray with a few sprigs of rosemary for 8 mins, or until cooked through. Remove and leave to rest.
- Meanwhile, heat the olive oil in a saucepan and fry the onion for 6 mins. Add the vinegar and sugar, bring to a simmer, and cook for 2 mins more. Spoon the onion mix onto a plate, then place the pork on top, thickly sliced and garnished with rosemary.
