Roast Pork Chop with Caramelised Onions
- 1 pork chop
- 1 tbsp olive oil
- 1.5 tsp chopped rosemary
- 1 chopped garlic clove
- For the Onions
- 2 tbsp olive oil
- 1 sliced red onion
- 2 tsp balsamic vinegar
- 1 tbsp brown sugar
- Preheat the oven to 200C. Place the chop in a bowl and mix with the oil, rosemary and garlic. Season well and leave to marinate for 20 mins. When ready, fry the pork for 2 mins on each side or until browned, then place in the oven for 10 mins to cook through. Remove and leave to rest for 5 mins.
- Meanwhile, heat the oil in a small saucepan and fry the onion for 5 mins on a low heat. Add the sugar and vinegar, bring to a simmer and cook for 2 mins, stirring regularly. Spoon the onion mixture onto a plate, then top with the sliced pork chop and serve with steamed savoy cabbage.
