Roasted Mushroom Gnocchi

  • 250g brown mushrooms
  • 500g fresh gnocchi
  • 3 tbsp extra virgin olive oil
  • 150g spinach leaves
  • 100g gorgonzola
  • Preheat the oven to 220C. Thickly slice the mushrooms, and toss them into a roasting tin with the gnocchi. Drizzle with 3 tbsp of olive oil, season well, and roast for 30 mins or until the gnocchi are golden.
  • Stir half of the spinach into the tin to wilt, and top with crumbled gorgonzola. Put the tin back into the oven for 5 mins, then serve with the remaining spinach and another drizzle of olive oil.
