Roasted Tomato Pasta Sauce

  • 2 kg ripe tomatoes, halved
  • 125ml olive oil
  • 1 tbsp salt and pepper
  • 1 clove of garlic
  • 1 handful of chillies, kept whole
  • A dash of balsamic vinegar
  • Sugar, to taste
  • Preheat the oven to 200C. Mix together the oil, salt, pepper, garlic, vinegar, and chillies in a large baking dish. Swirl the tomatoes in the mixture to coat well, then arrange the tomatoes cut-side up.
  • Sprinkle the tomatoes with a bit of sugar, then bake for 1 hour. Once collapsed and slightly blackened, purée everything together and pass through a sieve. Serve with pasta of your choice, or add meat or other ingredients to create your perfect sauce!
