Saag Paneer

  • 500g spinach leaves
  • 1 green chilli, deseeded and chopped
  • 300ml boiled water
  • 1 tbsp sunflower oil
  • 1 tsp cumin seeds
  • 2 chopped garlic cloves
  • 500g paneer cubes
  • 1 tsp chilli powder
  • 2 tbsp heavy cream
  • 1 tbsp lemon juice
  • Cook the spinach and green chilli together in the boiling water for 10 mins, then whizz into a puree in a food processor. Heat the oil in a large lidded pan, and sizzle the cumin seeds for 2 mins. Add the garlic, cook for 1 minute more, then pour in the spinach puree and cook for 15 mins.
  • Add the paneer, plenty of seasoning and the chilli powder, and cook - covered - for about 7 mins. Stir in the cream and then the lemon juice, mix well and serve with flatbreads.
