Saganaki Prawns
- 2 tbsp olive oil
- 1 diced onion
- 2 sliced garlic cloves
- 150ml white wine
- 400g chopped tomatoes
- 3 sprigs of oregano
- Pinch of sugar
- 200g large raw peeled prawns
- 50g crumbled feta
- Preheat the oven to 200C. Heat a tbsp of oil in a frying pan and cook the onion for 5 mins, then add the garlic and cook for 3 mins more. Pour in the wine and simmer for 3 mins, then add the tomatoes, sugar and oregano sprigs. Simmer for 8 mins, then tip into an oven dish.
- Scatter the prawns on top of the tomato mixture, then sprinkle with crumbled feta and drizzle with 1 tbsp of oil and some seasoning. Add to the oven and bake for 10 mins, then serve with crusty bread for dipping.
