Sage and Broccoli Spaghetti
- 150g spaghetti
- 150g long-stem broccoli, cut into 5cm lengths
- 3 tbsp olive oil
- 1 small onion, sliced
- 1 chopped garlic clove
- Pinch of crushed chillies
- 12 sage leaves, shredded
- Grated parmesan
- Boil the pasta in salted water for half the cooking time, then add the broccoli and boil until the pasta is al dente. Drain and save a cup of the cooking water.
- Meanwhile, fry the onion and garlic in the oil for 5 mins. Add the chilli flakes and shredded sage, cook for another 2 mins, then mix the drained pasta and broccoli in with the onion mixture. Loosen with a splash of cooking water, then scatter with parmesan cheese to serve.
