Sage and Broccoli Spaghetti

  • 150g spaghetti
  • 150g long-stem broccoli, cut into 5cm lengths
  • 3 tbsp olive oil
  • 1 small onion, sliced
  • 1 chopped garlic clove
  • Pinch of crushed chillies
  • 12 sage leaves, shredded
  • Grated parmesan
  • Boil the pasta in salted water for half the cooking time, then add the broccoli and boil until the pasta is al dente. Drain and save a cup of the cooking water.
  • Meanwhile, fry the onion and garlic in the oil for 5 mins. Add the chilli flakes and shredded sage, cook for another 2 mins, then mix the drained pasta and broccoli in with the onion mixture. Loosen with a splash of cooking water, then scatter with parmesan cheese to serve.
