Salmon and Broccoli Pasta
- 150g dried pasta
- 150g broccoli, cut into florets
- 1 tbsp olive oil
- 4 spring onions, sliced
- 2 salmon fillets, skinned and cut into chunks
- Pinch of dried chilli flakes
- 100ml heavy cream
- 1⁄2 lemon, zest only
- Salt and pepper
- Cook the pasta until al dente in a big pot of boiling salted water. Three minutes before the end of the cooking time, chuck the broccoli in the pan, and cook for a couple of minutes until just tender.
- Meanwhile, heat up the oil in a frying pan, and cook the spring onions for a couple of minutes to soften. Add the salmon and the chilli, and cook for about 4 minutes. Pour in the cream along with a ladleful of pasta water, and season liberally. Bring to a gentle simmer for 4 minutes, then drain the pasta and broccoli, and mix into the salmon sauce. Stir in the lemon zest, gently stir, and serve.
