Salmon and Bulgur Pilaf

  • 500g salmon, skinless and boneless
  • 250g bulgur wheat
  • 85g peas
  • 200g green beans, chopped
  • 2 tbsp each chopped chives and parsley
  • Salt and pepper
  • Preheat the oven to 180C. Wrap the salmon in foil and cook for about 15 mins. Meanwhile, cook the bulgur wheat in a lidded pan, with boiling water covering the wheat by about 1cm. Simmer for 15 mins or until tender.
  • Cook the peas and beans in a pan of salted boiling water, then drain. Flake the salmon and mix with the peas, beans, and bulgur, then stir in the herbs and season well. Serve with lemon and plain yoghurt.
