Salmon and Citrus Salad
- 250g new potatoes
- 150g French beans, sliced
- 2 salmon fillets
- 100g salad leaves
- 4 small tangerines or similar, 1 juiced, 3 sliced
- Chopped basil and coriander
- For the Dressing
- 2 tsp sesame oil
- 2 tsp tamari
- ½ lemon, juice only
- 1 chopped red chilli
- 2 tbsp chopped spring onion
- Steam the beans and potatoes for 8 mins, then arrange the salmon fillets on top of the vegetables and steam for another 8 mins or until cooked through and flaking.
- Mix the ingredients for the dressing together with the tangerine juice. Divide the salad leaves between 2 plates, top with the warm bean and potato mixture and the tangerine slices. Place the salmon fillets on top, then scatter with the herbs and drizzle with the dressing.
