Salmon Scotch Pancakes
- 115g flour
- 1 tsp baking soda
- 2 eggs
- 100ml milk
- Pinch of salt
- Oil for brushing
- Smoked salmon, horseradish sauce, and sour cream to serve
- Preheat a large non-stick pan. Place the flour into a bowl, break the eggs into a well in the middle, and whisk. Add the milk as you go, along with some salt, until a smooth batter is achieved.
- Brush the pan with a little oil, then add large tablespoons of the batter to the pan to make medium-sized pancakes. Cook for a minute, then when the surface of the batter features lots of little bubbles, flip them over to cook for another minute. Pile high with smoked salmon or whatever else you fancy, and enjoy!
