Salmon with Lemon and Walnuts
- 1 tbsp olive oil
- 4 salmon fillets
- 2 diced shallots
- 1 crushed garlic clove
- 25g chopped ginger
- 150ml white wine
- 150ml chicken stock
- 1 lemon, zest only
- 50g chopped walnuts
- 2 tbsp snipped chives
- Fry the salmon in the oil for 10 mins, turning halfway. Remove the salmon from the pan and set aside. Toss the ginger, garlic and shallots into the pan and fry for 4 mins, then add the wine, reduce by half, and pour in the stock and lemon zest. Simmer for 2 mins, then return the salmon to the pan and stir in the walnuts. Cook for 1 minute, then serve with a sprinkling of chives and some creamy mash on the side.
