Salmon Wrapped in Prosciutto
- 4 slices of prosciutto
- 2 salmon fillets
- 100ml white wine
- ½ lemon, cut into wedges
- 1 halved garlic clove
- Sprigs of lemon thyme
- Preheat the oven to 200C. Place 2 slices of prosciutto on a board, slightly overlapping. Sit one of the salmon fillets on top and wrap the prosciutto around the fillet to completely cover it. Repeat with the other salmon fillet to create 2 parcels.
- Place the fillets in an oiled baking dish and pour over the wine. Nestle in the lemon wedges and garlic, then scatter with thyme and seasoning. Bake for 20 mins, baste with the cooking juice, then bake for 10 mins more. Serve with boiled potatoes and steamed greens.
