Salt and Pepper Prawn Skewers
- 20 peeled king prawns
- 2 tsp crushed rainbow peppercorns
- 1 tsp sea salt flakes
- 1 star anise, seeds crushed
- 4 tbsp cornstarch
- For the dipping sauce
- 1 chopped red chilli
- 2 tbsp each of sesame oil, soy sauce and rice vinegar
- 1 crushed garlic clove
- 1 tsp sugar
- Toss the prawns in the sesame oil and thread onto 4 skewers. Mix together the salt, peppercorns, star anise and chilli with the cornstarch, then roll the prawn skewers in the mixture to coat. Combine the dipping sauce ingredients in a small bowl.
- Heat up a barbecue or griddle, and brush with a little oil. Grill the prawn skewers for 2 mins or until pink, crispy and cooked through. Serve immediately with your dipping sauce and some lime and coriander.
