Sardines with Paprika Crumb

  • 4 big whole sardines
  • 1 tbsp olive oil
  • 2 crushed garlic cloves
  • 1 slice of white bread, blitzed into crumbs
  • 1 tsp paprika
  • Handful of chopped parsley
  • Lime wedges, to serve
  • Preheat your grill. Season your fish inside and out, then stick under the grill for 5 mins, or until cooked through and blistered.
  • Meanwhile, heat the oil in a frying pan and gently fry the garlic for a minute. Toss in the crumbs and paprika, and fry until crisp. Stir in the parsley, and serve scattered over the fish with lime wedges on the side.
