Sardines with Ponzu Sauce

  • 12 whole sardines, gutted
  • For the Sauce
  • 100ml soy sauce
  • 35ml yuzu or lemon juice
  • 25ml rice vinegar
  • 35ml mirin
  • 25ml dashi
  • 200g daikon
  • Tip all the ingredients (except the daikon) for the sauce into a jar and mix well. Peel the daikon and grate, then squeeze out the water and set aside in a small bowl.
  • Season the sardines and skewer, then grill the fish for 4 mins on one side or until the skin is crisp, then flip and grill for 2 mins on the other side. Serve with the grated daikon and with plenty of the sauce.
