Sardines with Ponzu Sauce
- 12 whole sardines, gutted
- For the Sauce
- 100ml soy sauce
- 35ml yuzu or lemon juice
- 25ml rice vinegar
- 35ml mirin
- 25ml dashi
- 200g daikon
- Tip all the ingredients (except the daikon) for the sauce into a jar and mix well. Peel the daikon and grate, then squeeze out the water and set aside in a small bowl.
- Season the sardines and skewer, then grill the fish for 4 mins on one side or until the skin is crisp, then flip and grill for 2 mins on the other side. Serve with the grated daikon and with plenty of the sauce.
