Satay Seitan Skewers

  • 1 tbsp lemongrass paste
  • 1 tbsp lime juice
  • 1 tbsp oil
  • 200g seitan cubes
  • For the Sauce
  • 60g crunchy peanut butter
  • 1 tsp soy sauce
  • 15g grated ginger
  • 1 tsp sriracha or similar
  • Mix the lemongrass paste, oil and lime juice in a dish, then add the seitan and toss to coat. Leave to marinate for at least 20 mins. When ready, thread the seitan cubes onto skewers and place on a hot oiled griddle. Cook for 5 mins, turning occasionally until lightly charred.
  • Meanwhile, make the sauce by mixing the ingredients in a small saucepan. Add 5 tbsp of water and cook on a low heat for 2 minutes, then serve as a dipping sauce for your skewers.
