Satay Tofu Nuggets

  • 225g smoked tofu
  • 2 tbsp cornflour
  • ¼ tsp Chinese 5-spice powder
  • Pinch of smoked paprika
  • 300ml veg oil
  • For the Satay Sauce
  • 1 tsp brown sugar
  • 2 tsp lime juice
  • 4 tbsp chunky peanut butter
  • 3 tbsp rice wine vinegar
  • 1 tbsp soy sauce
  • 1 ¼ tbsp veg oil
  • 1 ¼ tbsp sriracha
  • 2 tbsp toasted sesame oil
  • Make the satay dressing by dissolving the sugar in the lime juice, then pouring into a blender with the rest of the ingredients and blending until smooth. Transfer to a dipping bowl.
  • Press the liquid out of the tofu by squeezing between sheets of kitchen paper, then cut into 8 cubes. Toss in a mixture of the cornflour, 5-spice and paprika, the sizzle in veg oil for 4-5 mins until golden and crispy. Thread onto skewers, and serve with the sauce for dipping - delicious!
