Sausage and Leek Mash-Topped Pie
- 4 big potatoes, peeled and cut into 3cm chunks
- 2 tbsp olive oil
- 6 quality sausages
- 1 tbsp flour
- 450ml chicken gravy
- 150g shredded kale
- 3 sliced leeks
- ½ tbsp mustard
- 3 tbsp milk
- 50g smoked cheddar, grated
- Boil the potatoes until tender, then drain and leave to steam-dry. Meanwhile, heat 1 tbsp of olive oil in a casserole, and pinch the sausage meat out of the skins directly into the pan. Fry for 8 mins, until golden brown. Add the flour and stir, then pour in the gravy and about 100ml water. Simmer for a few minutes, then add the kale and simmer for 5 mins more.
- In another pan, add 1 tbsp of oil and toss in the leeks to fry for about 10 mins. Preheat the grill to its highest setting, mash the potatoes until smooth, and stir in the leeks, mustard, milk, and some seasoning. Spoon the mash on top of the sausage mixture, scatter with cheese, and grill for 5 mins. Serve piping hot. Nice!
