Sausage and Lentil Simmering Pot
- 1 tbsp olive
- 400g top quality sausages
- 1 onion, finely chopped
- 1 crushed garlic clove
- 1 red bell pepper, sliced
- 250g puy lentils
- 150ml veg stock
- 125ml red wine
- Cook the sausages until browned all over in a frying pan with a little oil, then set aside. Add the remaining oil, pepper, garlic, and onion to the pan, and soften for about 5 minutes. Return the sausages to the pan along with the lentils, the stock, and the wine, and bring to a simmer. Cook over a moderate heat for 20 minutes, until lentils have softened, the sauce has thickened, and the sausages are cooked through. Serve with crusty bread, and enjoy!
