Sausage and Mash Pie

  • 4 x large potatoes, cut into chunks, and boiled until tender
  • 2 tbsp oil
  • 6 quality pork and herb sausages
  • 1 tbsp flour
  • 450ml chicken gravy
  • 150g shredded kale
  • 3 sliced leeks
  • ½ tbsp wholegrain mustard
  • 3 tbsp milk
  • 50g smoked cheddar, grated
  • Heat 1 tbsp of oil in a casserole. Remove the skins from the sausages, cut them into large pieces, and fry for 8 mins until golden. Add the flour, stir for a minute, then pour in the gravy with 100ml water. Bring to a simmer, then add the kale and cook for 5 mins. Remove from the heat.
  • In a separate pan, heat 1 tbsp oil, and fry the leeks for 8 mins until tender. Preheat the grill to the highest setting. Mash the potatoes until smooth, then stir through the leeks, milk, mustard and seasoning. Spoon the mash on top of the sausage mix, then top with the grated cheese and grill until bubbling.
