Sausage and Sweet Potato Bake
- 2 red onions, quartered
- 2 corn cobs, quartered
- 1 mango, chopped
- 2 sweet potatoes, cut into wedges
- 10 pork sausages
- For the Sauce
- 2 tsp each ground cumin and smoked paprika
- 2 tsp each of dried oregano and fennel seeds
- 2 tbsp barbecue sauce
- 2 tbsp veg oil
- Preheat the oven to 200C. Mix the ingredients for the sauce in a bowl, and tip the onion, corn, mango, potatoes, and sausages into a roasting tin. Pour over the sauce, stir to coat, and season.
- Bake in the oven for 45 mins, and toss after 25 mins or so. When the sausages are completely cooked through, serve on plates with a sprinkling of coriander and some crusty bread, if you fancy.
