Sausage and White Bean Braise
- 1 tbsp olive oil
- 1 chopped onion
- 1 crushed garlic clove
- 1 diced carrot
- 1 diced celery stalk
- 4 sprigs of parsley, chopped
- 300g Italian-style sausages
- 125ml red wine
- 400g tin of chopped tomatoes
- 2 x 400g tins of cannellini beans, drained
- Heat the oil in a saucepan and sweat down the garlic, onion, carrot, celery and parsley for 10 mins. Squeeze the sausage meat from the skins in small chunks, and fry in the pan until coloured all over. Add the wine, tomatoes and beans, tip in 250ml of water, then simmer with the lid on for 30 mins. Season to taste, and serve with crusty bread.
