Sausage and Zucchini Linguine

  • 1 tbsp olive oil
  • 8 sausages, cut into 4 pieces
  • 1 sliced onion
  • 3 sliced garlic cloves
  • 300ml crème fraîche
  • 2 zucchini
  • 350g linguine
  • 5 sage leaves, chopped
  • Chopped parsley, to serve
  • Fry the sausage quarters in the oil until cooked through. Remove and set aside. In the same pan, fry the onion and garlic until softened, stirring in the sage leaves for the last minute. Return the sausages to the pan, stir in the crème fraîche, and heat gently for 3 mins.
  • Grate the zucchini into the sauce, stir well and season. Cook the linguine until al dente in boiling salted water, then drain and toss through the sauce. Loosen with a little cooking water, season again, and serve with a sprinkling of parsley.
