Sausage and Zucchini Pilaf
- 100g basmati rice
- 1 tsp veg oil
- 3 quality pork sausages, meat squeezed out of the skins
- 1 tsp black onion seeds
- 1 zucchini, sliced
- 100g peas
- 200ml veg stock
- ½ bunch of mint and dill, finely chopped
- 2 tbsp yoghurt
- Heat the oil in a medium lidded saucepan, and fry the sausage meat for 3 mins until golden. Stir in the seeds and zucchini, and fry for 2 more minutes. Stir in the rice, stock, peas, and about half the herbs, then pop the lid on and simmer for 10-12 mins, or until the rice is tender.
- Fold the remaining herbs into the rice, and serve with a big dollop of yoghurt. Delicious!
