Sausage Goulash Stew

  • 2 tbsp olive oil
  • 450g quality pork, beef, or lamb sausages, cut into chunks
  • 2 chopped onions
  • 400g tin of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tbsp veg stock powder
  • 1 tbsp smoked paprika
  • 4 medium potatoes, cut into chunks
  • 2 handfuls of shredded cabbage, kale, or spring greens
  • Heat 1 tbsp of oil in a large saucepan, and brown the sausage chunks all over. Remove from the pan and set aside. Pour in the rest of the oil, and fry the onions for 5 mins or until golden. Pour in the tomatoes and tomato puree, then add two tinfuls of water along with the stock powder and plenty of seasoning.
  • Add the potatoes and simmer - covered - for 10 mins. Drop in the greens and the sausage chunks, heat for 10 mins more, then serve hot with crusty bread.
