Sausage Larb

  • 3 tbsp sesame oil
  • 2 limes, juice only
  • 1 tbsp chilli sauce
  • ½ tbsp Thai fish sauce
  • 3 pork sausages
  • 1 tbsp Thai red curry paste
  • 4 shredded spring onions
  • ½ bunch chopped coriander
  • Small bunch of torn mint leaves
  • 2 Little Gem lettuces, leaves separated
  • 1 cucumber, cut into matchsticks
  • Mix 2 tbsp of sesame oil with the lime juice, fish sauce and chilli sauce, then set aside. Heat the rest of the oil in a wok and squeeze the sausage meat out of the skins, and fry for 5-6 mins until golden. Stir in the curry paste, fry for a minute more, then mix through half the herbs and spring onions.
  • Arrange the cucumber and lettuce in two bowls, and add the meat mixture and drizzle with the spicy dressing. Finish with a scattering of fresh herbs, and share with a friend.
