Sausages and Capsicum Bake with Balsamic Vinegar

  • 8 quality pork and fennel sausages
  • 3 whole garlic cloves
  • 3 red and 3 yellow capsicums, cut into chunks
  • 2 red onions, cut into 1cm wedges
  • 1.5 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tbsp honey
  • Preheat the oven to 200C. Pop the sausages, garlic, capsicums and onions into a roasting tin. Drizzle with oil and add some seasoning, then bake for 15 mins.
  • Add the vinegar, honey and oregano, mix well and bake for another 15 mins - you want the sausages cooked through and browned, and the vegetables golden. Serve immediately with mash, if you fancy.
