Scallops with Bacon
- 400g white potatoes, chopped into chunks
- 1 bunch of sliced spring onions
- 4 slices of bacon, chopped
- 10 scallops, roe removed
- Chopped parsley
- Boil the potatoes until tender, then drain, mash and mix with the spring onions and a knob of butter. Set aside and keep warm. Meanwhile, heat a dash of oil in a frying pan and melt a knob of butter. Add the bacon and cook until crisp. Remove from the pan.
- Add the scallops to the pan with the residual butter, oil and bacon fat, and cook for 1 min on each side. Remove to a serving plate, sprinkle with chopped parsley, and scatter with the bacon. Serve with a side of the spring onion mash and some lemon for squeezing.
