Scallops with Kale and Anchovies

  • 2 tbsp olive oil
  • 3 diced shallots
  • 2 crushed garlic cloves
  • 2 lemons, zest and juice
  • 300g kale, shredded
  • 50g anchovies, chopped
  • 9 large scallops (corals removed) halved horizontally
  • Knob of salted butter
  • Heat half the oil in a pan, and add the garlic, shallots, and lemon zest to soften. Tip in the greens and anchovies, and cook for 5 mins to wilt.
  • Heat the remaining oil in a frying pan, and fry the scallop halves for 2 mins on each side. Add the butter and lemon juice,and swirl to make a glossy sauce. Serve immediately with the greens, and the pan juices drizzled over.
