Scallops with Parmesan and Lime

  • 12 fresh scallops in the shell
  • 1 tbsp melted butter
  • 1 crushed garlic clove
  • 125g grated parmesan
  • 2 limes, juice only
  • Chopped coriander
  • Preheat the grill to a medium temperature. Clean the scallops and open the shells, leaving the scallop in the half-shell. Place on a baking tray and brush with a mixture of the butter, garlic and some salt and pepper.
  • Scatter the parmesan over the scallops, then grill for 7 mins or until the cheese is melted and golden. Sprinkle with a squeeze of lime and serve with a scattering of coriander. Delicious!
