Sea Bass with Pesto Dressing
- Handful of basil leaves
- 1 tbsp pine nuts
- 3 tbsp olive oil
- 1 clove of garlic
- Salt and pepper
- 1 tbsp oil
- 1 sea bass fillet
- Salt and pepper
- 1 tomato, chopped
- 1 tbsp pine nuts
- 2 tbsp olive oil
- 1⁄2 lemon, juice and zest
- Make the pesto dressing by blending all of the ingredients in a food processor to make a coarse paste.
- For the fish, heat up the oil in a frying pan over a medium heat. Fry the bass, skin-side down for 4 minutes, season, then turn over and fry for 3 minutes more. Remove from the pan and set aside. In a small bowl, mix the tomato, pine nuts, olive oil, and lemon, then spoon over the fish and drizzle with the pesto dressing. Easy!
