Sea Bass with Pesto Dressing

  • Handful of basil leaves
  • 1 tbsp pine nuts
  • 3 tbsp olive oil
  • 1 clove of garlic
  • Salt and pepper
  • 1 tbsp oil
  • 1 sea bass fillet
  • Salt and pepper
  • 1 tomato, chopped
  • 1 tbsp pine nuts
  • 2 tbsp olive oil
  • 1⁄2 lemon, juice and zest
  • Make the pesto dressing by blending all of the ingredients in a food processor to make a coarse paste.
  • For the fish, heat up the oil in a frying pan over a medium heat. Fry the bass, skin-side down for 4 minutes, season, then turn over and fry for 3 minutes more. Remove from the pan and set aside. In a small bowl, mix the tomato, pine nuts, olive oil, and lemon, then spoon over the fish and drizzle with the pesto dressing. Easy!
